We've updated the Counter Product Module with new procedures, get to know all the new changes and try it yourself

Hello everyone,

We have been working with our Counter Products supplier Kohberg to improve the quality and workflow for our cakes.

Why?

We have experienced issues in our storage process of the Counter Products. Once the plastic is removed and not sealed any longer, the items go dry quickly and the quality drastically.

From 1st of March Kohberg will change the packaging of the Counter Products to Flow Pack. This means that they will remain soft and moist, as long as the plastic foil is sealed. It also means that stores should defrost 1x flow pack at a time, instead of single units.

The counter product will come in trays of:

  • Carrot Cakes, Brownie & Banana Bread: boxes of 40pcs - 8x5 trays
  • Blueberry & Chocolate Muffins: boxes of 24pcs - 8x3 trays

The new defrosting procedures:

  1. The counter products are taken from the freezer
  2. Do not unpack the baked product. Keep the tray and the foil on to maintain high product quality
  3. Placed in a plastic canteen in the fridge too defrost

Introducing Flow Pack:

Morning:

  1. Make sure the Counter Display is empty and clean from the close last night.
  2. Re-fill the display with correct amount of defrosted counter product by following the counter display guide.
  3. Defrost cakes to the next morning

 Close (EOD):

  1. Display before EOD
  2. Waste all remaining counter product so the display is empty.
  3. Clean the display + the marble plates and make sure the display is ready to the next day.
